Acid casein is a high-nutritional-value phosphoprotein, obtained by precipitating skim milk at its isoelectric point (pH 4.6). It has a high protein content (min. 85.5%), low fat (max. 2%), and low lactose (max. 1%), making it ideal for applications such as fresh cheeses, sports drinks, caseinate production, and processed meats. It presents excellent functionality, purity, and microbiological safety. It is supplied in 25 kg multi-layer paper bags with an internal polyethylene lining.

About this product

1. General description

Acid Casein is a phosphoprotein isolated from skim milk by precipitation at its isoelectric point (pH 4.6).

It is a high-nutritional-value, insoluble, and stable ingredient, widely used in the food and nutrition industries.

2. Composition and properties

It contains a minimum of 85.5% protein (95% on a dry basis), with low fat (≤2%) and lactose (≤1%).

It has a natural pH of 4.5, maximum moisture of 10%, and excellent functional stability.

3. Applications and packaging

Applied in fresh cheese, sports drinks, caseinates, dairy blends, and processed meats.

Packed in 25 kg multi-layer paper bags with polyethylene lining, free from coliforms, E. coli, and Salmonella.
