Certified HALAL (yes) and optionally Kosher, and it contains the allergen: milk.2. Sensory and analytical characteristicsIt has a clean and pleasant flavor and aroma, with a practically smooth and sealed appearance, medium orange-yellow color, firm, smooth, and compact texture, and typical character with no significant defects. Analytical values: pH between 4.9 and 5.4, maximum moisture 39%, minimum 50% fat in dry basis, and salt between 1.4% and 2.2%.3. Microbiological standards and storageIt meets high standards: Coliforms ≤100 cfu/g (target ≤10), E. coli <10 cfu/g, Listeria and Salmonella negative, Staphylococcus negative, and yeast & mold <500 cfu/g (target ≤100). It is vacuum-packed in plastic film, labeled with MM/DD/YY format and “Contains milk” statement, and must be stored at 36°F (2.2°C).
