Nonfat Dry Milk (NFDM/SMP) is produced by spray-drying pasteurized skim milk. By standard, it contains no more than 5% moisture and no more than 1.5% milkfat. NFDM is classified according to the cumulative heat load applied during manufacture into low-, medium-, and high-heat types, which correlate with undenatured whey protein (WPNI) levels and thus solubility and functionality. Products are offered as agglomerated (instant) for fast dispersion or non-agglomerated for conventional use. These definitions and specs are reflected in USDA/ADPI standards and supplier literature (e.g., Dairy America).
