Made from pasteurized milk with selected starter culture providing the classic diacetyl buttery note. Additive-free.
Physical-chemical: milk fat ≥82% (AOAC 938.06), moisture ≤16% (AOAC 920.116), non-fat dry matter ≤2% (AOAC 938.06), pH 4.60–5.40, acidity (as lactic acid) ≤0.18, Reichert-Meissl ≥24, sorbic acid: none.
Microbiology: coliforms <10 CFU/g, yeast & mold <10 CFU/g, Enterobacteriaceae <10 CFU/g, Salmonella negative/25 g, coagulase-positive Staphylococcus ≤50 CFU/g.
Organoleptic: homogeneous natural yellow color, smooth uniform texture, clean taste and aroma.
